the enemy burned the golden bridge

this is the BEST recipe for chicken parmigiana, ever. we got it from pants' boss, and the funny thing is, i have never even liked chicken parm until trying this version. and now i LOVE it and want to make it all the time!

randy's chicken parmigiana
pasta of your choice (i prefer angel hair)
pasta sauce (i am lazy and usually just get sauce in a jar if it's on sale, but sometimes i'll make my own)
chicken breast(s)
mozzerella cheese (i like the soft, fresh stuff the best. i get it from trader joe's and it is SO good!)
parmigiano-reggiano cheese, shredded
a few handfuls of italian breadcrumbs
a couple cloves of garlic
olive oil
s/p

while the pasta is cooking and the sauce is heating up on the stove, i make the chicken.
here's the steps:
1 - pound a chicken breast or two till flat
2 - coat the chicken with olive oil, s/p, and garlic (i just grate the garlic with my box grater), then roll in the breadcrumbs
3 - lay the chicken on a piece of foil on a baking sheet, and put it under the broiler for a few minutes till one side of the chicken is done, then flip
4 - add some mozzerella cheese on top of the flipped side, then cook till chicken is done and the cheese is bubbly and golden and melty on top
5 - plate up the pasta and sauce, top with the cheesy chicken, and toss the shredded parm cheese over the whole thing
6 - devour!
